Indian Roasted Cauliflower

About the Recipe

This easy roasted cauliflower gets a flavor boost from garam masala, a classic Indian blend of warm spices such as cinnamon, cloves, cardamom, and black pepper.

Serves 4


  • 1 head cauliflower, cut into florets
  • 1 tablespoon coconut oil, melted, plus more for the baking sheet
  • 1 1/2 tablespoons garam masala
  • 1/2 teaspoon salt

Preheat the oven to 425°F. Oil a large rimmed baking sheet.

Place cauliflower florets in a large bowl. Add oil and toss to evenly coat. While continuing to toss, sprinkle with garam masala and salt. Toss until evenly coated.

Arrange florets on the baking sheet. Place on the top rack of the oven and roast for 8 to 10 minutes, stirring halfway through. Serve immediately.
