Jackfruit Sloppy Joes

Add a healthy twist this classic sandwich!

Serves 2

Ingredients

  • 1 teaspoon low-sodium vegetable broth
  • 2 minced garlic cloves
  • 1/8 teaspoon ground mustard
  • 2 tablespoon tomato paste
  • 1-2 tablespoon no salt tomato paste
  • 2 burger buns
  • 1/4 cup chopped white onion 
  • 1 tablespoon organic ketchup
  • 1/8 teaspoon ground tumeric
  • 1/8 teaspoon sea salt
  • 1 10oz. package frozen jackfruit
  • 1/3 cup chopped green bellpepper
  • 1/4 teaspoon chili powder
  • 1 teaspoon worcestershire sauce
  • 1/8 teaspoon ground black pepper

 

Method:

Add broth and onion to a pan over medium-high heat. Cook for 2 minutes, stirring regularly. Add more broth as needed. Add peppers and garlic to the pan. Continue to cook and stir for another 2 minutes. Place the thawed, drained jackfruit into a food processor and pulse until it resembles the consistency of ground meat.

Add chopped jackfruit to pan. Stir to mix all ingredients together. Cook for an additional 5-6 minutes. Add all of the remaining ingredients. Stir to mix well. Reduce heat to medium-low. Cover the pan and let cook for 2 more minutes. Divide mixture into 2 equal parts. Spoon onto 2 burger buns. Serve and enjoy!
