Savory Pumpkin Seeds

This multi-purpose mini recipe is great as a topping for chunky potato soup or as an addictive game-day snack.

Makes about 1 cup

Ingredients:

  • 1 cup pumpkin seeds
  • 2 tablespoons nutritional yeast
  • 1 tablespoon finely chopped fresh flat-leaf parsley
  • 1 tablespoon low-sodium vegetable broth or water

Method:

Preheat the oven to 350°F. Toss ingredients together and spread on a large rimmed baking sheet. Bake until crisp, about 10 minutes. Let cool before serving.
